This cooked “salami” produced since before the 1950s in Prato and the surrounding areas & revived by Marini. To make it more in line with modern diets, spices and aromas have been lightened, giving a more delicate result. Made from pigs born and bred in Tuscany. it’s a stunning and quite unique example of a Mortadella.
