More than 150 varieties of leaves, herbs and edible flowers are grown through the summer season. Each salad batch is unique as it is hand picked and blended based on which leaves and flowers are freshest and best on the day. Thought is given to the balance of leaves, flowers and colours so that the salad is beautiful to look at and full of interesting flavour. Edible flowers are used from a wide range of vegetables and herbs adding colour and interest to the plate and bringing an exciting variety of both sweet and savoury tastes.
